David, that makes sense actually. Freezing things tends to create crystals that punch holes in the cell structure of a lot of fruit and vegetables and I’m sure cabbage is no exception. So much in the same way a tomato or strawberry becomes instant tomato or strawberry sauce once frozen, I would imagine a cabbage gets pretty pliable too. I’m gonna try that next time.

I never had meatless cabbage rolls before. These are great. As someone who's never made cabbage rolls before I wish you could have mentioned how to leaf a cabbage without losing your mind.
My mother-in-law, who makes my favourite cabbage rolls told me (after-the-fact) to freeze the cabbage roll. Apparently, it's easier to leaf (or peel) as it thaws.
Very Best,
DG

Ukrainian Christmas dinner looks great! You're welcome, for the magic ingredient for the cabbage rolls topping/sauce-Heinz Tomato Soup. Believe me, I've tried Campbells soup and it just doesn't do the dish justice. Interesting that you add the uncooked rice to the sauteed onions and then added water to cook the rice. I add the sauteed onions to the cooked rice and as much more butter as needed for the rich flavour. I may try your way next time.
