Recent Delights Vol. 16. I don’t get out much. I blame bread.

What better way to dress a salad than with beef chili.  Yes, I know, Wendy’s has done this for years but still, I get no credit.

Is it possible to pile a soupy chili onto two pieces of bread to make a sandwich? Not really. But here’s an attempt.

-

One of my first attempts at chapati bread to accompany my recent resurgence in curry cravings.  These worked fairly well but I’m going to work at bit more at this recipe to nail it down.  I just bought 9 kilos of ‘atta’ durum wheat flour so its’ gonna happen baby.

This is a picture of one of my favourite things ever.  That’s right, my Nikon D70s camera.  Oh, and there’s a steak chili with white beans in the photo too.

-

Spaghetti with pancetta, zucchini, lemon and parmesan.  I gave Alexandra the option of this pasta or hot dogs for supper one night and to my delight, she went with the pasta!

-

Pad Thai for one for lunch one day.  I eat a lot of Pad Thai but in this case I decided to make it in a new non-stick pan I got for Christmas rather than my usual wok.  It actually worked better than in the wok and to this day, I STILL haven’t been struck by lightning.

Coriander chutney.  Got leftover cilantro?  Mash and mix with lemon, grated onion, chili and olive oil.  Make fresh chapatis.   Ram into face.

-

Fish cakes!  How am I going to fake being a Maritimer without making fish cakes once in a while?  Nice chunks of salt cod with New Brunswick russet potatoes here.  Hawk was every inch a sailor, five and twenty years a whaler….

-

More Maritime fakin’ the foodfunk.  I got a great deal on a pork cottage roll so I turned it into a wonderful, classic Maritime boiled dinner.  This ended up being one of Alexandra’s recent favourites.  She was born in New Brunswick though, so there ya go.

-

Presoaking some russets for french fries and brining some chicken wings. This was one of those moments when I looked at the two bowls in the sink and said “OOOH!! This looks like art!  Where’s my camera?”

-

On a day when I didn’t think I had anything in the fridge for lunch, I managed to come up with this.  I had made pitas and hummus the night before so that was a good start, I had some leftover ground pork from a recent Japanese meal, and some cabbage from my Maritime boiled dinner.  I spiced the pork with some cinnamon, allspice and chili, formed into meatballs and fried them up.  That was served in the pita with hummus and a quick shredded cabbage salad with lots of olive oil, lemon juice and dried mint.  Stunning!

Fresh bread.  Still can’t beat it.

-

Baked beans.  Served up with fresh bread?  Okey doke.
