Video: Pork Curry. More Whole Spice Deliciousness.
Pork Curry
1 tablespoon vegetable oil
1 piece of cinnamon
1 teaspoon cumin seeds
4 whole cloves
5 or 6 whole cardamom pods
1 red onion, chopped
2 teaspoons ground coriander
2 teaspoons hot red pepper powder
1/2 teaspoon turmeric
2 or 3 cloves of garlic, finely minced, plus an equal amount of minced fresh ginger
2 or 3 fresh chilies, chopped
2 or 3 plum tomatoes, chopped
pinch each of salt, pepper and sugar
water as needed
2 tablespoons creamed coconut (I used Grace brand, it’s in a little green box)
1 lb or so of cubed, lean pork
Fresh coriander to garnish
Start by chopping onion, garlic, ginger, tomatoes and chilies to have them ready. Also have your dried spices handy before you start. Heat a high-sided pan over medium heat and add the oil. Add the cinnamon, cumin seeds, cloves and cardamom. Stir and gently fry for a few seconds, then add the onion. Season with a little salt at this point. Lower the heat to medium low and fry gently for about 10 minutes until they begin to brown and are aromatic. Add the ground coriander, hot pepper powder, garlic, ginger, fresh chilies and turmeric. Fry gently for a minute or so then add in the tomatoes. Stir and add in a bit of water to adjust the consistancy to a nice sauce. Add in the creamed coconut and stir. Stir occasionally while simmering to melt in the creamed coconut. After about five to seven minutes, add in the pork and stir to coat the pork in the sauce. Let it simmer and bubble for about 10 minutes or until the pork is just cooked through but still tender. Add chopped fresh cilantro and cook for just another minute or so, then serve.
Note: The whole spices are still in the dish so you can pick through and remove them as needed. Personally, I don’t mind crunching on the odd cardamom pod but others might not like it. Others are weird.

Made this…didn’t share…had it three nights in a row. Very yummy.
Might try it with chicken, and add some spinach.

Made this last night but replaced the pork with some paneer I picked up at an Indian grocery down the street. Best curry I’ve ever had.
No one will be surprised that this rings my chimes big time. Love cardamom. Long live WHOLE SPICES.
